Better Slicing with Bizerba at the Intergastra 2018

Balingen, 9 Jan 2018 | Bizerba will present slicing and meat-processing products at the Intergastra 2018 (February 3 - 7, 2018, Stuttgart/Germany). Executives from the hotel, gastronomy and catering trade will find innovative solutions for the gastronomy business in hall 5, booth #D39.

According to the motto “Better Slicing”, Bizerba will demonstrate Brunner-Anliker’s vegetable slicer as the highlight at its booth. Since August 2017, Bizerba exclusively sells Brunner-Anliker’s products in Germany. The vegetable slicers are available with different throughputs. For instance, the GSM 5 model with a throughput of up to 150 kilograms per hour is ideal for restaurants, inns and small to medium-sized canteens. With a throughput of up to 300kg/h, the GSM XL model is designed for large canteens and vegetable farmers. Apart from vegetables, the devices can be used to slice fruit, to grind nuts and to grate cheese or chocolate.

 

Better Slicing with Bizerba Slicers

Additional slicers for the gastronomy industry include the VSC 280 manual vertical slicer for all kinds of manual slicing tasks including boiled ham, boiled sausage, cheese and long-life goods like salami or air-dried ham. Also on display will be the S111 strip cutter and tenderizer as a multi-functional device especially suited to the small-business sector. For instance, the S111 can be used for the comminution of food and for processing meat products in butcher shops, kitchens and hotels.

 

The mincing sector will be covered as well. As a compact mincer designed for sales counters or preparation rooms, the FW N22/82 can be used to process raw, boiled or smoked meat. Food-processing operations can achieve optimum results with the FW N22/82, which is usable for marbled, hot or cold meat, bacon, offal, crusts or even soup vegetables and can be cleaned quickly and efficiently.

 

Solutions for Weighing, Collecting Money, Labeling, and Vacuumizing

In addition to current slicing solutions, Bizerba will also demonstrate systems and products in the area of goods management, scales, checkouts, labeling, and packaging. For instance, the .CWS goods-management system supports the entire purchasing process from ordering to the control of goods received and invoice matching. While the delivery business benefits from simplified bid preparation, .CWS also ensures more straightforward requirements and picking lists, delivery notes, invoices and management of outstanding items. Facing the current Food Information Regulation, the system detects and structures ingredients and allergens for presentation on displays and labels. For labeling and presentation purposes on shop scales and counter labels, nutrition tables can be generated based on the recipe. Furthermore, .CWS can be used to output detailed product passports and fact sheets. Combined with the KH II 800 counter scale, this ensures optimum customer information at the fresh-food counter.

 

Sausage products must be packed after slicing and weighing. Therefore, Bizerba presents the Baseline P200 vacuum chamber machine that can be used to pack sausage, meat, cheese, vegetables as well as other consumer or industrial goods safely and easily. Thanks to its straightforward, intuitive operation, the machine can be handled by untrained staff.

Bizerba’s offering for the retail business is rounded out by a comprehensive label portfolio. The labels developed and produced by Bizerba and the backing laminates are all adjusted to Bizerba devices —from scales to industrial labelers.
